Brown Sugar Buttered Green Beans
In case you haven't noticed, I've been prepping for Thanksgiving on the low for about a week now. Earlier this week I made delicious fall flavored Pumpkin Chocolate Chip Pancakes for Thanksgiving breakfast - don't forget about the first meal of the day! Earlier last week, I made a Rosemary Roasted Roots side dish to accommodate no-turkey eaters that's ready in under 30 minutes.
I'm not crazy about green bean casserole, mostly because it's not very vegan friendly, but I do love green beans! And who doesn't love (vegan) butter? My great aunt made something similar to this for our family almost two decades ago and I never forgot it. It's only three ingredients but so delicious and easy to whip together last minute.
- 1 lb frozen or fresh green beans
- 3 tbsp brown sugar, not packed
- 3 tbsp vegan butter
- Cook your green beans according to the package, dependent on whether you're using frozen or fresh.
- Add the butter and brown sugar, tossing until the butter has fully melted and the brown sugar looks evenly distributed onto the green beans. If the butter is not melting, you can heat in the microwave for 30 seconds at a time until fully melted.
